Homemade Dinner Rolls
3 1/2 tsp active dry yeast
1/8 tsp sugar
1/2 cup water (105-115 F)
2 large eggs
1 cup lukewarm milk (90 F)
1/4 cup sugar
1/2 cup melted unsalted butter
1 tsp salt
5 cups unbleached all purpose flour
- Place the water in a small bowl and sprinkle the yeast and 1/8 tsp sugar over the water. Allow to sit until foamy (10 minutes or so).
- In a large mixing bowl lightly beat the eggs. Add in the milk, 1/4 cup sugar, butter, salt and 1 cup flour. Beat until creamy.
- Add in the yeast mixture and another 1 cup of flour. Continue to beat.
- Add in flour 1/2 cup at a time until it forms a ball.
- Take the dough and knead it on a floured surface, sprinkling with more flour as needed, until it is soft and doesn't stick to your hands.
- Place in an oiled bowl, cover and let rise until doubled in bulk (about 1 1/2 hours).
- Divide the dough in half and roll each half into an 18 inch rope.
- Cut each into 18 1-inch pieces, roll each piece into a ball and place in an oiled baking dish barely toughing.
- Cover and let rise again for 45 minutes.
- Preheat the oven to 375 F.
- Bake the rolls for 18-23 minutes, until golden on top.
